A Farewell Cake

My immediate boss recently left the company. He told us he's leaving because of some personal reasons which we all know what is one of those reasons. There is someone in this company whom we find very challenging to work with - to put it in a nice way.

Thought of making him a cake as his farewell present. Chose something with chocolate since he's quite a chocoholic - Mars Bar cheesecake with butterscotch and chocolate sauce. The cheesecake is encased in oreo biscuit.

These were my messages...

All the best and we really really miss you...

Very Strawberry Cheesecake

There is a "little gal" in my office who's crazy about strawberries. The last time I made the fruit cake, she basically went to extend to "fight" for the strawberries. For her birthday, she requested for a cake with loads of strawberries. She also wanted a cheesecake.

I think strawberry cheesecake is a wonderful idea, I love strawberries too. Furthermore, there are these delicious Korean strawberries on sale in the supermarkets lately, have you tried? It's only RM8.90 if you get it from Jaya Jusco.

Instead of my usual baked cheesecake, I decided to make a chilled cheesecake this time. One of the reason was I don't want to "cook" the strawberries. The cake turned out to be pink due to the strawberry juice - the strawberries were chopped before mixing into the cheesecake mix. I already love the colour to start with.

The cake was then topped and decorated with even more strawberries. I've actually used 3 boxes of strawberries for this cake. Hence it became this VERY strawberry cheesecake.

Almost everyone (okay, actually everyone) love this cake, it's smooth and creamy. A bit too soft and "watery" for me, so I will add more gelatin the next time to give it a sturdier texture. Other than that, this is a wonderful cake, look at the amount of strawberries amidst the tofu-soft cheesecake!

Mango Cheesecake

Delivering a birthday cake tomorrow. A friend ordered this for her mother. Isn't the message cute?

A mango cheesecake with oreo chocolate base, surrounded with sponge finger. Extra message is on dark chocolate plaque because it will not look nice if the wordings are written onto the mangoes. The hearts decorations are made of fondant.

Sadly, it is not the season for "black gold" mangoes, these other type of mangoes don't give the nice aroma, and they don't really taste that great. This makes the cake less perfect. Perhaps I should not take order related to mangoes when the "black gold" mangoes are not in season.

Chocolate Blueberry Cheese

Not sure if I should call this a blueberry cheesecake with sticky chocolate base, or a sticky chocolate cake with blueberry cream cheese topping.

Made with fresh blueberries and courverture chocolate. The centrepiece - (from top left clockwise) tangerines, chocolate mint sticks and chocolate chips, blueberries and chocolate coated coffee beans.

White Chocolate Lychee Cheesecake

Okay, I made another lychee cheesecake...

It was my ex-boss's birthday and I thought a white chocolate cheesecake would be special enough. It was originally planned to be raspberry white chocolate cheesecake, but there was no raspberries at the supermarket, we are talking about Cold Storage here... So since the Lychee Cheesecake was very well received the other day, I thought perhaps ex-boss would like that too.

Yet to hear from him though... hmm...

White Chocolate Lychee Cheesecake

Baked this recently for an office birthday celebration. The cheesecake is rich due to the white chocolate. Mascaporne cheese gave it a lighter taste compared with full cream cheese.

I was at the supermarket shopping for the cake ingredient and since it was near Chinese New Year, one big section of the shelf was taken over by can lychee display. I thought lychee could very well go with the cheese, hence this white chocolate lychee cheesecake.

I love the taste and it was really well received. Got some marks for being some what creative too. :)

The base was still oreo biscuit which is delicious and it is an all time favorite.

Decorated with some fruits. I would have to work on a more creative decoration in the future. And too bad I only managed to have two tiny pieces.
