Sticky chocolate blueberry cheesecake

Last post for the year! May you all have a fruitful and indulging year ahead with good health, loads of wealth and great success.


Made a sticky chocolate blueberry cheesecake for CS's order. It was for his dad's birthday celebration. The last time I baked this cake was in February for CS' birthday, this is one of the cakes which I only bake like once or twice a year for special occasions, and so far, no order request. The cake has a thick layer of sticky chocolate base, soft centre with oozing chocolate and a layer of cheesecake with fresh blueberries.

I quite like this cake and it's especially good for chocolate lovers who love cheesecake but don't want to get a chocolate cheesecake. However, it is also quite tricky in handling, you do need spoons to eat this cake. And perhaps due to a slight shortage of baking time this round, the cake I heard was a bit too soft with too much chocolate flowing out. Cake has a big crack too when delivered. Have put a note for fixing that.

Made some fishes with jelly with this great mould from Tan See Fong (through Wilton retail). Looks so real right?


Chocolates that looks like little stones and some grass effects. Wanted to create the water effect with some blue piping jelly, but decided not to overdo the cake decoration.
